SOIL:
Hilly terrain, composed of deep layers of marl and sandstone, with colluvial deposits on the surface.

HARVEST:
Manual harvesting. The optimal harvest time is visually determined upon reaching peak grape ripeness, which in this vineyard occurs between the first and second week of September.

VINIFICATION:
The grapes are destemmed, and the berries remain in contact with the skins for 12 hours of maceration. After that, they are gently pressed to extract the must, which is immediately cooled to 10–12°C for natural static clarification. The free-run must is separated from the less noble parts and transferred into traditional oak barrels, where fermentation and subsequent aging take place until spring.

AGING:
6–8 months in oak barrels (60HL and 7HL) and an additional 2–4 months in the bottle before release.

WINE CHARACTERISTICS:
A white wine with great structure, featuring relatively high alcohol content and acidity. Fine and elegant, with aromas reminiscent of apple and acacia flowers. With aging, it develops a pleasant bouquet with notes of artemisia. Ideal as an aperitif and well-suited to a wide range of light appetizers, soups, and dishes based on eggs or fish.

SERVING TEMPERATURE: 10–12°C
