Pinot Grigio is an invigorating grape variety and unlike other white varietals it processes a distinctive mineral and chalky mouth feel, whilst still retaining delicious fruit flavours. Uniquely the wines are more about style and texture, than sheer fruit weight.
The cool continental climate with the neighbouring mountain sides is ideally suited to growing Pinot Grigio of varietal purity and integrity. We sourced our vibrant and fun Pinot Grigio from mature premium vineyards located within the King Valley region to obtain a more diverse spectrum of flavour and texture.
TASTING NOTES
Colour: Light yellow with green
Bouquet: tinges with apple, pear and fresh lemongrass flavours underpinned by a lingering and miner ally palate
Palate: We have opted for a drier style as this in combination with the textural mouth feel allows the variety to showcase its nuances

Maturation: Our philosophy was to avoid both skin contact and macerating the fruit,in order to minimize the extraction of undesirable colour and phenolics. A slow and gradual cool ferment was then followed by a month on yeast lees to encourage the integration of the fruit flavours.
