Prosecco, the sparkling Italian white wine on everyone's lips, is made from the grape of the same name, which is native to northeast Italy. With its origins in the hills around Treviso and Conegliano Veneto, Prosecco can also be grown in other parts of Italy under strict rules. Real prosecco is only made with one grape variety (the Glera), and it must be produced by traditional methods using no additives or preservatives. Prosecco has become a cult favourite in recent years (and even has its own brand of prosecco: Prosecco Superiore DOCG Valdobbiadene). It actually has a long tradition as one of Italy's most famous wines.
The history of Prosecco stretches back over 2,000 years since it was first mentioned in ancient Roman texts by Pliny the Elder as 'marsala' or 'vintage'. Northern Italians have been making this style ever since then, but they aren't alone—there are some areas south of Venice where you can also enjoy this delicious beverage when visiting Tuscany or Umbria regions!

Prosecco can also be produced in other regions of Italy, but only if you strictly follow the rules. You must use the prosecco grape, and it must come from the region of Veneto and Friuli Venezia Giulia.

You can find prosecco by itself or mixed with other ingredients like fruit or herbs for a refreshing summer cocktail. The most popular way to drink it here in Australia is chilled on its own as an apéritif before dinner. It pairs especially well with seafood dishes such as oysters or shrimp cocktail, but there are plenty of other options for pairing too!
If you're in a restaurant and see that the wine list includes "prosecco," make sure it is made with the right grape. There's only one kind of prosecco, the real prosecco is only made with one grape (glera), in two regions of Italy: Veneto, north of Venice; and Friuli Venezia Giulia, which lies between Trieste and Udine on the Slovenian border.
